2 lbs yellow squash sliced, 1/4 cup chopped onion, 1 can cream of chicken soup, 1 cup sour cream, 1 cup shredded carrot, 1- 8oz pack herb seasoned stuffing, 1/2 cup butter or margarine melted
Cook squash & onion in boiling water for 5 minutes, drain
Combine soup & sour cream, stir in carrotts, fold in drained squash & onion
Combine stuffing & butter
Spread 1/2 of stuffing in bottom of 12x9x2 baking pan- spoon veggie mix on top..sprinkle remaining stuffing over veggies
Bake 350 for 25-30 min or until heated thru.
