Buy 3 (10oz) packages white mushrooms. Trim the tough stem ends and cut in half. Julienne half a red onion, cut a pint of cherry tomatoes in half and cut a yellow or orange bell pepper into bite size pieces and add to mushrooms for some color.
For the marinade, take a large (16 oz.) oil and vinegar Italian bottled dressing such as Wishbone; open and pour off about half the oil. Pour the rest in a large bowl and whisk in 3 cups V-8 juice, 1/2 cup Worchestershire Sauce and 1/2 tsp. black pepper. Add mushrooms and vegetables and stir, making sure that the dressing contacts all surfaces. Cover and marinate overnight in the refrigerator, stirring once or twice.
