1 can whole kernel corn, drained
1 can creamed corn
1-8oz box jiffy corn muffix mix
1 cup sour cream
1/2 cup (1stick) melted butter
1 to 1 1/2 cups cheddar cheese shredded
Melt butter and put into bottom of 8 x 8 cake pan.
I have doubled this for a crowd, then you need a bigger baking pan
In large bowl stir the first 4 ingredients. Pour butter into Pan bake 45 min at 350 degrees remove add cheese and put back until browned.
I changed the recipe a little, if you like red & green peppers.....add about 1/8 finely chopped into the original mix....if you like it spicy add a couple drops of hot sauce.
I also used low fat sour cream and cheddar cheese that is 50% less fat and it still turned out great.
