WHAT CAN I DO WITH FROZEN CHEESE

I HAVE TRIED MELTING THE CHEESE, BUT I FIND THE TEXTURE IS ALMOST GRAINY?  IS THERE A WAY TO AVOID THIS.  IT IS JUST MILD/MEDIUM CHEDDAR.  IT WAS ACTUALLY AN ACCIDENT THAT IT GOT INTO THE FREEZER IN THE FIRST PLACE.

THANK YOU FOR YOUR HELP.

You could grate it into a white sauce and then slowly melt it.....and cook macaroni and then blend it and bake it for macaroni & cheese.....might need some pepper.....some people like to add a little stewed tomatoe to it.....or bread crumbs on the top.

As long as the cheese has been well wrapped it is fine. We buy cheese when on special offer and cut into blocks. When a recipie requires cheese,  I simply defrost the cheese on the counter for say 10 minutes then it can be crumbled. I use this on anything from pasta sauce to au gratin dishes.
