how do i make basil, garlic, lemon or chilli infused oil

looking for info on best ways to make basil, garlic, lemon or chilli infused oil, do i use fresh or dried herbs or do i need to buy some kind of 'essence' type thing to add to the oil ?

A fairly easy way to make garlic infused oil is to roast the garlic in the oven in the oil of your choosing. You can buy minced garlic or fresh garlic, if you buy fresh, you can peel and cut it or use a garlic press to make more of a paste.  If you do not want pieces of garlic in the oil you can peel the garlic and press on each clove with the side of a large knife to break the clove open.  Once you are done roasting you can cut mince and use the garlic in a different dish and save the oil which will have a bit of a garlic infussion.
