Can I do a stuffing for tenderloin of pork without breadcrumbs

One diner is gluton intollerant so I either need gluton free breadcrumbs or no breadcrumbs

what about a corn bread or rice stuffing.................or just no stuffing in her's...........

I just thought of something......try this...cook some bacon crispy....save 2 tablespoons bacon grease, cook finely chopped onions......add some cooked rice to that and maybe some apples & raisens.....and stuff the pork with that......something different, you might need some pepper and parsley at the end before you stuff the pork chops
