what can I prepare using sour or pickled cabbage?

My mother has made a large batch of sour cabbage and needs to serve it in various ways. Can it just be subbed in as regular cabbage as in cabbage rolls and cabbage casseroles, etc?

Mix together equal amounts of pickled cabbage, crushed pineapple and grated mild cheese.  Add a little mayo and serve on a bed of lettuce or use to fill tortillas- sounds weird - tastes incredible.
