I would use a little tomatoe sauce instead.  Beef is too strong.you won't taste the mussels.  some people call it tomatoe gravy, but it goes well with clams also..............you also can cook them in a little butter, white wine and fresh flat leaf parsley.............make sure that you soak them in salted water and scrub to get all the sand off and rinse well before cooking them.
