Limp fries are when the potatoes are soft cooked in hot oil, not crispy like the regular french fries.  You can make different kinds of gravy made from veggie broth or any kind of beef, pork or chicken broth thickened to you desired thickness.  I like to use cornstarch to thicken it putting 1 or 2 tablespoons in water mix it well and thicken the gravy....some people like flour.......it also okay to use.............you can add chopped fresh parsley at the end or if you like chopped scallions........or just plain.
