Yes, you can freeze cheese. I do all kinds, I freeze and them place in vacuum seal bag and wrap in terry towel and replace in freezer. Check cheese every month for freezer burn(change in color and texture)...use up quickly if it is just starting. I thaw out in the refrig and the towel seems to help it not to be crumbly. I do cream chees, cheddar, Munster, Italian and Mexican cheeses too...block, shredded, etc.
