It will take almost 2 hours with the lid on to cook a chicken that large.  You can add celery stalks and carrotts cut in half to give it good flavor for broth..some people add onion I think it makes it taste bitter.....cover with water enough to cover the top......cook on Med high.....you can tell with a fork it is cooked enough.

The Frugal Gourmet used to put a chicken in a pot of boiling water, bring it back to boiling, put the lid on the pot, boil it for 10 minutes, then turn off the heat and let it sit for an hour and it was done perfectly. I have done that and it worked though the chicken was a little less than 6 lb...
