How can I freeze cooked carrots without them getting rubbery?

When I cook chicken soup I freeze it and it's fine but the carrots are rubbery. P

So I am thinking, just don't leave them in the soup.............put them cooked onto a seperate tray and freeze them and then put them back into the soup as needed.............the soup has to be cold before going into the freezer.  We use fresh carrotts in soup, not frozen.
