A standard for roasting meat is 15 to 20 minutes per pound at 350 degrees. So the basic answer depends on how big your roast is. But the most important question, "Is it done yet?" depends completely on the internal temperature.

Therefore, never roast a large cut of meat without a meat thermometer. Insert it into the thickest part of the muscle, but don't let it touch a bone.

Rare, which is okay for beef, but not for pork, is a reading of 120 degrees.

Medium is 140 degrees, a good time to remove the roast, since it continues to cook even after it's out of the oven.

Well done is 160 degrees; past this number the meat dries and toughens up, but some people prefer this degree of doneness.
