How do I preserve kale for use later?

I have lots of Kale and cannot eat it all right now.  What can be done to preserve it for later this fall or winter?

Inspect the Kale for any discoloration. Wash it.

Fill a large pot with with water, bring to a boil, then turn it off.

Blanch the Kale for about 45 seconds in the water. (Submerge in water and lift out with a spider),

Place in icy cold water to stop the cooking process. Let the Kale drain until dry, then pack in a freezer bag or container suitable for freezeing.

This process works for most vegetables. My mother taught me how to do this because she liked the taste of fresh greens when they were not available in the winter.

If you have lots and lots and limited freezer space you might can the kale. I use the directions for other greens (turnip, mustard and collards) to can mine. It keeps very well for at least a year,  A dehydrator is handy also for making kale chips. Store in a wide mouth canning jar in the freezer and add to soups, stews and casseroles as desired. Lucky you for having so much, mine did not do as well this summer.
