For peppers, I wash, cut off top, dry off, cut in half take out the seeds and the white membrane and either leave in half, cut in strips or cut small for ommettes they do not stick together, just put into a freezer zip bag and get the air out and freeze.  Chives I just wash dry off on paper then cut and put on tray & freeze.  Beets you have to blanch give them an ice cube bath and drain....let them dry off on a rack and freeze on a tray and bag in freezer zip lock bag, get the air out and put back into freezer be sure to mark what they are and date done.
