I never peel figs. I was taught to make a syrup and cook the whole figs in it for 5 minutes, then  jar and process in a water bath for 45 minutes for pints. Oh and putin 1 tbsp of lemon juice to each jar.  I leave the syems on. And you get fig syrup forancakes in the end. Yummy.
