ring donuts                                           preparation 30 mins                           makes 20

350g(12oz) self raising flour                 cooking 3 mins


2.5(1/2)ground cinnamon                      1. sift flour, salt, cinnamon and spice into a bowl.

2.5ml(tsp) mixed spice                           2. rub butter into flour until mixture resembles fine breadcrumbs.

100g(4oz)butter                                      3. add sugar

50g(2oz)castor sugar                              4. beat egg with milk, add all at once, to dry ingredients.

                                                                 5. mix to a soft, but not so sticky, dough with a knife.

                                                                 6. turn out onto a lightly floured work surface. knead quickly until smooth.

                                                                 7.roll out to 1cm(1/2inch) thickness

1 egg                                                        8.cut into rounds with a 5cm(2inch) biscuit cutter. remove centres with a 2.5cm

                                                                  (1inch) cutter. re-roll and cut into more rings.

                                                                  9. fry, a few at a time, in hot fat or oil for 2-3 minutes, turning once.

                                                                  10.remove from pan. drain thoroughly on absorbsent kitchen paper.

                                                                   11.toss in caster sugar.

                                                                    12.serve while still warm.

150ml(1/4pint)fresh milk

deep fat or oil for frying extra caster sugar
