what happens to protein meat stored for several days and then cooked

in a commercial catering / ingredients will pass through a number of processes from when they first arrive in the kitchen to when they ae selected from a menu and the finished dish is eaten by a customer.

stored at 34 to 39 degrees , 3 days in covered container and used.......or frozen
