We usually get 3 in a bag at Sam's.......I wash & cut up and bag in 2 cup freezer bags get the air out & mark, date & freeze for soup............that for 1 1/2 stalks........only can use in something cooked like soup, or stuffing.  The other 1/2 I wrap the cut end in wet paper towels and stick it head first in a plastic bag , don't seal the bag..........we use it for everything from salad to cut eating with low fat cream cheese and or peanut butter.  Kids like it for a snack after school.

Wrap it in tin foil. lasts a long time.
