How do you can dried peas in the oven?

Friends do dry canning in the oven.  Flour,rice split peas ect. at200 degrees for two hours.  Mine didn't seal.  Does high altitude make a difference ?

I never heard of it done that way..........you can freeze it in heavy duty freezer plastic bags, get the air out, mark date & freeze for 1 year.

I never heard of canning in the oven.  I only do a water bath......
I found out it was the altitude.  When canning split peas(dried), noodles, flour, rice, you put the jar with the lid and rim on in the oven at 200 degrees for 2 hours.  For me I had to add 15 more mins. at 250 degrees for the altitude.  They all sealed with in the hour after they were out.  Thanks :)
