What happened to sweet and sour with sour pickels ?

During 40s through the early 60s, the Chinese restaurants used sour pickels in their sweet&sour recipes.  Sour is nonexistent in the current recipes.  What happened?

They usually make it fresh when you order a dish off the menu, why not ask them if they can make it that way for you.

Thius is another question that is fague . Sweet and sour sauce can easily be made by yourself .Just look it up opn the internet .I did and it came out great .
