Awesome NYTIMES Deviled Eggs

Make one dozen "Simple Perfect Boiled Eggs". While eggs are still warm, cut in half longwise, and remove yolks to a fine strainer,  reserving whites. Push yolks thru strainer to remove all lumps. Add 4 tablespoons room temp butter, 1 tablespoon dijon mustard, 1/2 cup mayonaise and juice of 1/2 fresh lemon. Stir to combine or blend with handmixer; handmixer will increase volume and make yolks fluffy. Add salt & white pepper to taste.  Spoon or pipe from pastry or other bag back into reserved egg whites. Garnish with chives or caviar, or dust with paprika or herbs such as fresh or dried dill or tarragon, as desired.  You can also add or garnish with chopped scallions, smoked salmon, etc. whatever sounds good to you. Refrigerate until ready to serve....  Really good......
