about 2 lbs a piece, clean, scale, gut & rinse.  Leave head & tail on.....dry it with paper towels..........it keeps the moisture in................roll into seasoned flour w salt & pepper or seasoned salt & red pepper.....if you like it hotter use hot sauce couple drops into egg milk and mix....................then drip it and roll into corn meal or seasoned bread crumbs................serve with lemon wedges, cole slaw, stewed tomatoes.  Hot or cold tea with a big fresh salad with you own special dressing.
