I clean, slice, parboil (drop in boiling water with a teaspoonful of lemon juice in it), quickly drain, turn out ona clean dish towel. Pat dry, place in single layer on cookie sheet. Freeze a couple hours, then dump them in a zipper freezer bag, press out air. And store in freezer. To use small amount, bteak off a portion and return the rest to freezer. I have also just cooked them in a bit of broth, then frozen them in some of the liquid. Then dump in a soup, stew or sauce right from the freezer
