why do we need to preserve food?

i need a scientific answer if that is possible....

We need to be prepared for any emergency and fresh food will not hold up for long term use.  Dried food and emergency canned food & water it necessary for survival.  That is why during WW1 & WW2 that almost every one had a victory garden and dried or canned food for the family & extended family.  Some friends with gardens shared or traded their fresh veggies for other things.  You can't rely on freezing.  If the power goes out you need a generator and to run that 24hr a day need fuel.  If the power is out then you can't pump fuel at the fuel station. It's called self preservation.
