I keep it 2 days............that's it.  Bacteria can built up.  But you could cut or slice it and freeze it in small packs of 1/2 cup to 1 cup and just take out what you need.  Freeze extra gravy in ice cube trays and next day take them out and put into heavy duty freezer bag, get all the air out and mark & date & back into the freezer.  If you have a vac-pac machine use that for chicken or use heavy duty freezer bags follow the same directions as above. Bacteria does not have a smell or bad taste right away, you can get real sick if the fridge temps are not 34 to 39.  We keep our freezer at zero.
