Best way to cook pork joint in a electric oven

My pork joint alway shrink and the meat is dry . I thought it might be alot to do with my electric oven can u explain why please . thank you

I am a little confused..........are you doing pork chops, or rib roast?  What degree are you roasting them.  Are you using a bag or tray or container covered or not covered.

You did not mention the temperature that you are cooking with.  Can you do it in the crockpot with some soup or broth and veggies at the bottom?  I also use sauerkraut, an onion, apple same amount of water as sauerkraut and pork on top........put the lid on and put in on low in the morning and it will be cooked by dinner.  Make your favorite salad and a hot or cold beverage with fresh fruit for dessert.  Keep the lid on to hold the moisture inside.............
