I would cut some up to eat with a little sugar or splenda...............and invite company after you make 2 large peach cobblers......serve warm with icecream.

You also could skin them all dip them in lemon juice & water to keep the color and freeze them on a tray and then bag them in heavy duty freezer bags...........get the air out and defrost them as needed, mark date & put back into the freezer.
