We use olive oil, but you could use another veggie oil of your choice.  If you decide to reuse, the when the oil is cooled down it has to be strained and we put that later in the fridge.  You can tell by the color and smell of the oil if it can be used over again.

Canola oil works great for french fries. Rule of thumb is potatoes actually clean grease because they absorb all the remnantes of the foods from the past. So oils taste age really depends on if it is kept remnante free. Alot of oils have different high temp variables.
