bread flour has more gluten in it

protein in flour can differ

cake flour   7-8%

southern all purpose flour   7.5-9.5%

northern all purpose flour 11-12%

bread flour 12-13%

cake flour is low gluten

whole wheat is high protein

self rising flour has all purpose plus baking powder mixed in

unbleached flour is better

store sealed in fridge or longer in the freezer.
