How long do barrel cook beef rib racks?

We gave a calaveras barrel and are cooking beef ribs. How long should they take?

It depends on how the ribs were prepared, how hot the coals are and if it has a covered top.  Some people cook the grease out of the pork.  Some people do a dry rub.  Some people do a wet rub.  This is going to be trial and error for you.  Good luck with the ribs.  I have to watch my fat intake so I use a big pot and boil out the grease.  You might not like it that way.  Some people use BBQ sauce from the store and some people make their own.  It is easy to make your own.

For us, I boil it and then cook it closed & turn it over.  I have to count the BBQ sauce because of the sugar so I just put some on my after I cook it.  This will spatter while cooking so keep it away from the front edge so you don't get hot grease on you or your clothing when you lift the lid.
