I really would prefer a caste iron pan that does not have a wooden handle.....2nd choice would be glass.......I do not use those coated  teflon pans......I do not use alumimun at all.

Between those two, glass would be best.  I have never used non-stick coated pans to bake.  I use plain old metal pans that my mom used for many years, they are well "seasoned" and have always worked great.

I do not use non-stick pans because I do not want to be eating that coating, and if you are cutting food with a knife or using a spatula, you most likely will get some of that into the food.  I use glass, aluminum, or metal pans.

Glass is the only option but if you are using coated pans you can put oiled papers or waxed paper  covering in side the pan that touches the cake mixture.
