We use a caste iron frying pan..........1/2 full of oil or veg. lard and heat it to 350......................then don't crowd the pan, cook in batches maybe 2 or 3 pieces....maybe 4 if their small.  Use a lid 10 to 15 minutes depending on size.  after you take one batch out....carefully using metal tongs.  when you put the next batch in cover it with the lid.  have paper towels on a platter ready to drain the chicken.
