When you say just egg curry it means so many curries that can prepair with eggs.I will give you one curry that can make with coconut milk.

You need 1 1/2 cups first extracts of coconut milk,One cup of second extracts of coconut milk,One small size onion, Garlic two cloves,One Green chillie,One tea spoon fenugreek,Half a tea spoon black pepper powder,One tea spoon turmeric powder,One tea spoon curry powder, small piece of cinamon,Curry leaves,Rampe(leaf with a fragrance when cooking),Half a tea spoon mustard,Half a tea spoon lime juice,One tea spoon salt and two eggs.

Cut onion, green chillies and garlic in to small pieces. Heat a pan with second coconut milk and add all ingredients except lime and eggs.Keep for about two minutes in low heat stiring with a spoon.Break eggs in to a bowl and beat with a egg beater or fork.Add beated eggs in to the curry and stir it for one minutes. Then add first coconut milk and stir,Keep till the bubbles appear in the curry.Remove from the fire and add lime juice.

You can put eggs separately after full boiling and removing shells.
