That's a good sized piece of salmon.  Scale, gut & rinse the salmon...use a baking tray with sides and make a heavy duty foil on it to make a big foil area to encase the fish.  rub the fish with 6 tablespoons olive oil, 2 tablespoons salt 1 tablespoon black pepper if you like tarragon or fennel choice which one you like...8 shallots cut up make a foil pouch as this is a big fish put it sealed on the baking tray and bake at 450 for 45 minutes.................check it.....it might need more time..............the fish is very large.....it has to be pink & flakey you can leave the foil open at this time and when you take it out put some chopped fresh parsley.  Make sure the insides are done.  The rule of thumb is 15 minutes for every lb of fish....remove any skin before serving, I like to cook it with the head and tail on as this keeps it juicy, you could remove that before serving this sized fish is going to be hard to lift out probably better to take it out using the foil and just roll the foil around it once you get it on a serving plate.........if you like tartar sauce................1 cup of mayo, 1 tablespoon finely chopped pickle 1 teasp finely chopped onion, 1 teasp parsley, mix well and refrigerate.........if you don't like mayo you can use sour cream...I add couple drops of fresh lemon..........if you don't like onion...don't use it, you might like relish instead of pickle....any salmon left over you can make salmon cakes................
