You have to partial fry them in hot oil...dry them off as much as possible before frying this will prevent splashing...............they drain and seperate on a big tray...........freeze and put in heavy duty zip lock bags and then date & mark and you can take out as many as you want............this is what the restaurants do.  Partial frying holds the color & taste.  When you buy them frozen in the store....that is what the company does before they freeze it.
