That was made famous by the Waldorf Astoria Hotel between 1893 and 1896 in NYC, NY.

Depends on how many people....................

I went to a very expensive luncheon and this is the way it was served in individial bowls that were lettuce lined and topped with smalls of cut chicken breast.

The mix was and depending on how many people you are serving..............several red & green apples.....leave the skin on.....have a bowl of lemon water ready....core the apple and chop & put it into lemon water to keep it from turning brown............white & red grapes unseeded...............raisens...chopped celery..........a little mayo...touch of sugar and walnuts.........mix it together..........if it needs more moisture I add a little sour cream.......mix it good....taste it....put it in small lettuce lined bowls and top with cooked small pieces of chicken.  There are many variations of this.
