The juices run thru the breast and they are moist and yummy instead of all the juices running out of (think gravity) the white meat.

half way thru baking this you have to turn the breast upright.........and finish baking it that way it will look brown and watch it does not burn...you might need to cover it with foil if it gets too brown.  This is a new way to have the whole turkey or chicken moist & delicious.  Also some cooks are using new 5 gallon containers and putting 1 cup kosher salt with water.......mix well then add the turkey and put in an area that is 34 to 40 degrees for several hours....then rinse it............
Oils from dark meat pass through white meat during cooking keeping white meat moist, also cover bird while cooking with tin foil and seal it tight then uncover for last 20 min to brown.
