I will give you an asian way for a mutton curry. First wash and cut meat in to pieces as you like. Then cut onion,Gatlic,Green chillies,ginger and keep a side.Heat little oil in pan and put little musterd in to the pan. Then add curry leaves,lemon grass,Rampe(a leaf with fregrance when cooking)piece of cinamon,fenugreek seeds and ingreedients above. When onion gets brown add curry powder and chillie powder as desired & stir with a spoon.When curry powder gets dark brown add mutton and stir, Add salt & tamarind to taste. Add water and cook for 20 minutes in low heat covering the lid. If you want to make gravy thick add tomatoes cut into small pieces.Taste and give your comment.
