wash the pumpkin, cut in half, scoop out the seeds & strings.  Use a tray roast  at med temp until cooked, use ice cream scoop and measure out cooked cooled pumpkin into 2 cups of pumpkin.  You can freeze.  Then just take out what you need for a pie........you also can roast the seeds on another tray with a little olive oil & salt.......what they don't burn.
