can celery be frozen to be used in stuffing at a later time ?

I have a stalk of celery.  I can't use it all right now and was wondering if I can chop it now, freeze it to be used at thanksgiving to make stuffing (Turkey dressing)?

Yes I wash, dry and chop celery the size that I need it.  It will get a little soft but it saves time & money.  It can be used in stuffing & or soup.  I also freeze the onions that I need for stuffing.
